CELSINEO helps at grape harvest – for best quality of Austrian natural wine
The brought in grape harvest is treated gently before and after pressing: The mash is precisely cooled and stored at a controlled temperature until further processing - in a trailer with CELSINEO cooling. In this way, the fermentation process is controlled, and high-quality fermentation is ensured. This is of central importance to the Nigl winery, known for its natural wines: The wines are produced by hand and as far as possible without interference in the cellar. Small yields, manual harvesting methods and the most extensive renunciation of modern vinification methods produce every year mineral quality wines that stand out in taste from the industrially produced mass.
